Molten Chocolate Cake


(Chili's style)

1 box dark chocolate cake mix (plus the ingredients it calls for)
1 recipe hot fudge
Vanilla ice cream
Chocolate shell (hardens when you put it on ice cream)
Caramel (optional)

1. make the cake mix as directed, pour batter into "texas size" muffin tin (you can also try a regular sized muffin tin) and cook as recommended on box
2. After cooling, cut a "well" in the top of each mini cake, and spoon out excess cake. Spoon in hot fudge sauce
3. If you are making it for later, put the cakes into the freezer, and when you are ready, place the cakes in the microwave, and warm them up accordingly.
4. top with vanilla ice cream, and chocolate shell.

Mmmmmmmmm! So good!

Fudge Pudding Cake


1 c. All-purpose flour
3/4 c. granulated sugar
2 TB baking cocoa
2 tsp baking powder
1/4 tsp. salt
1/2 c. Milk
2 TB vegetable oil
1 tsp vanilla

1 cup chopped nuts (or chocolate chips!)
1 c. packed brown sugar
1/4 c. baking cocoa
1 3/4 cup boiling water (can do in microwave)

1. Mix flour, granulated sugar, 2 TB cocoa, the baking powder and salt in 2-quart microwaveable casserole (a 9x9 glass pan will work perfectly)
2. Stir in milk, oil, and vanilla. Stir in nuts. Spread evenly in casserole. Mix brown sugar and 1/4 cup cocoa; sprinkle over batter. Pour boiling water over batter.
3. Microwave uncovered on Medium (50%) 9 minutes; rotate casserole 1/2 turn. Microwave uncovered on High 5-6 minutes or until top is almost dry. Serve warm with ice cream of whipped cream.

Store leftovers in the refrigerator

Brownies

Brownie Mix:
Just as handy as the box, but cheaper!

6 cupsflour
4 tsp.baking powder
4 tsp.salt
8 cups sugar
1 (8oz) canunsweetened cocoa powder (2 1/2 cups)


Combine ingredients in a large bowl and mix well with a wire whisk. Store in an airtight container or ziplock bag. Makes 15 cups mix.

Brownies:
2 1/4 cupBrownie mix
1/4 cupwater
1/4 cupoil
2eggs--beaten
1 tsp.vanilla extract
1/2 cupnuts--optional


Preheat oven to 350F. Grease and flour an 8 inch square pan. Beat wet ingredients with a whisk then add to the brownie mix. Stir with a spoon until smooth, don't beat it. Stir in nuts if desired. Pour into the prepared pan and bake 30 minutes or until edges separate from the sides of the pan. Serve with frosting if desired, or sprinkle with powdered sugar.

Snack Cake--has No Eggs, No Milk! CHEAP!

Preheat oven to 350 degrees.

1 1/2 cupflour
1 cupsugar
3 tbs. cocoa
1 tsp.soda
1/2 tsp. salt


Mix the dry ingredients REALLY well in an ungreased square cake pan. Make sure that soda and salt is evenly distributed. Make 3 holes in the flour. In each hole put the following:
6 tbs.oil
1 tbs.vinegar
1 tbs. vanilla


Pour over all the ingredients:
1 cupwater


Stir well with a fork until blended. Bake for 25 minutes or until a toothpick inserted in center comes out clean.

Easy Hot Fudge

1/2 cupbutter or margarine
1 cupsugar
1/3 cupcocoa powder
1/4 cup milk
pinch salt
1/2 tsp.vanilla


Melt the butter in a small sauce pan. Add the other ingredients. Bring to a boil and boil one minute. Remove from heat and add vanilla. Serve warm over icecream, or pour over a cake as frosting. It doesn't store well-it granulates, so eat it all up!

Rice Krispy Treats

Melt together:
1/8 c.butter
1/8 c.peanut butter

Add:
4 c.mini marshmallows

Stir until melted. Pour over 6 cups rice crispies. Mix and press into a 9 x 13" buttered pan.
